I can haz Tabouleh?

Yes, it's another food blog! Can't get enough of the stuff I tell ya!
Last night I had the girls over for (way too much) wine, bad TV and dinner. As I opted to clean the house and spend time in the sunshine instead of worrying over dinner we had Shake n' Bake chicken strips and my world famous tabouleh. It may not look like much but it's a delicious world of flavour for your tongue. It's also a crowd pleaser at pot lucks, etc.
Tabouleh Recipe
2 Cups Bulgar Wheat (or Couscous if you prefer)
2 cups boiling water
2 tbsp extra virgin olive oil (may need more-depending on how dry/moist you like it...that's what she said...)
1 lemon
2-3 chopped cloves of garlic
2 tbsp course mustard
1 red pepper
3/4 cup crumbled feta (or more if you like)
1/2 red pepper
1 1/2 cup of chopped brocolli florets
some cut up fresh mint (I like a lot but you determine what's best for you and your guests)
(can also add chopped green or yellow pepper, green onion instead of red, chopped cucumber, whatever the heck else ya think would be good)
1) Pour 2 cups of boiling water over bulgar wheat in medium size bowl. Let sit for 20 minutes (until water absorbed)
2) Stir around bulgar wheat. Add oil and mustard and the juice from lemon (watch out for seeds!). Stir some more.
3) Add garlic and red pepper and feta and brocolli and mint last (as it wilts when stirred too much).
4) Allow to cool in fridge for 20-30 minutes.
5) Serve.
